This is My Favorite Mortadella Sandwich Recipe

mortadella sandwich

I’ve made a lot of mortadella sandwiches in my life, but this one is, without question, my absolute favorite.

It’s the kind of Italian mortadella sandwich that belongs on your culinary bucket list.

It’s simple at its core, but when made with high-quality ingredients, it’s truly next level.

Mortadella is often called Italian bologna, but if you’ve only ever had standard American bologna, trust me—this is a completely different experience.

Real Italian mortadella is a rich, silky, lightly spiced pork sausage studded with cubes of creamy pork fat.

It’s one of my favorite Italian cold cuts, and when you get it from a great Italian market or a good deli counter, you’ll immediately understand why it has cult status all over the world.

And if you’ve been seeing those huge mortadella, burrata and pistachio sandwiches all over your social feeds lately, this recipe is right in that wheelhouse.

The combination makes sense. You have salty mortadella, creamy cheese, nutty pistachio pesto and really good bread. It doesn’t need much else.

Why This Mortadella Sandwich is So Good

This isn’t your basic fried bologna sandwich. It’s indulgent, layered, and completely customizable depending on what you’re craving. Here’s why this recipe is always a big hit:

  • Crispy pan-fried mortadella on the outside for a slight crust and deep flavor.
  • Layers of creamy, melty cheese like provolone cheese or fresh mozzarella.
  • A spoonful of pistachio pesto or arugula pesto for a nutty, herbaceous twist.
  • Soft, bakery-style rolls, like kaiser rolls, that soak up the flavors without falling apart.
  • A finishing drizzle of olive oil and maybe a few sun-dried tomatoes to take it over the top.

And the best part?

It works perfectly as both a cold mortadella sandwich or a hot, pressed fried mortadella sandwich with melted cheese oozing out the sides.

If you want to make the version that I think gets people reaching through their phone screen, use burrata or stracciatella, pistachio pesto and a big pile of paper-thin mortadella.

That combination is ridiculous in the best possible way.

The Ingredients That Make It Next Level

This sandwich only has a handful of components, but when you choose high-quality ingredients, the results are incredible.

  • Slices of mortadella: Get the good stuff. Visit an Italian market or a specialty shop where they slice it thin and fresh.
  • Melty cheese: I love provolone cheese for its sharpness, but fresh mozzarella or creamy burrata cheese make this seriously indulgent.

  • Soft bread: Kaiser rolls are my go-to, but a crusty Italian loaf or ciabatta works, too.
  • Pistachio pesto: Adds richness and a subtle nuttiness. Swap with arugula pesto if that’s more your vibe.
    Pistachio pesto
  • Dijon mustard: Optional, but I like the slight tanginess it adds.
  • Sun-dried tomatoes or roasted red peppers: For a little bite of sweetness and acidity.
  • Drizzle of olive oil: Always choose extra-virgin for the best flavor.

Want the Viral-Style Mortadella Sandwich?

Here’s the variation I’d make if I wanted one of those sandwiches that looks almost too good to eat.

Use:

  • Lots of very thinly sliced mortadella
  • Fresh burrata or stracciatella
  • Pistachio pesto
  • Chopped roasted pistachios
  • Fresh arugula
  • A drizzle of extra-virgin olive oil
  • A little lemon zest
  • Warm ciabatta, focaccia or schiacciata-style bread

The lemon zest and arugula are important.

Mortadella, burrata and pistachio are all rich ingredients. That little bit of brightness and bitterness keeps the sandwich from becoming too heavy.

That’s the difference between piling trendy ingredients onto bread and actually making a great sandwich.

Step-by-Step: How I Make It

Step 1. Crisp the Mortadella

Heat a grill pan or skillet over medium-high heat. Layer your slices of mortadella in the pan until they start curling up and turning slightly golden brown. You’re after that perfect crispy pan-fried mortadella texture. Here’s a tip: don’t lay every slice completely flat. Loosely fold or bunch the mortadella into little piles. You’ll get more edges touching the hot pan, which means more crispy spots while the inside stays soft and silky.

Step 2. Build the Base

Split your soft bread and, if you like, lightly toast it on the cooking surface to give it a slight crust. Spread pistachio pesto on one side and a thin swipe of Dijon mustard on the other. If there’s some rendered mortadella fat left in the skillet, toast the cut side of the bread right in it.

Trust me on this one.

Step 3. Stack the Sandwich

Add a generous mortadella pile straight from the pan, then layer on your melty cheese. Sometimes I go with provolone cheese; other times, fresh burrata cheese for something more luxurious. For a classic mortadella and provolone sandwich, put the provolone directly onto the hot mortadella while it’s still in the pan so it starts melting around the edges.

Step 4. Finishing Touches

Top with a few sun-dried tomatoes, roasted red peppers, or even a spoonful of fresh ricotta if you want it creamier.  If you’re doing the burrata version, add the burrata after the mortadella comes out of the pan instead of cooking it. Close it up and give the sandwich a quick press back on the skillet if you’re using provolone or mozzarella and want the cheese to melt slightly.

Step 5. Serve and Enjoy

Slice, serve, and pair with a cold beer on a hot day. Whether you enjoy it warm and gooey or as a cold mortadella sandwich, it’s an excellent handheld meal every single time. And whatever you do, eat it while the bread is still warm and the edges of the mortadella are crispy. That’s when this sandwich is at its best.

What Cheese Goes Best With Mortadella?

I get this question a lot because mortadella works with more cheeses than people realize.

For me, these are the best:

Provolone: If you want a hot sandwich, this is probably my first choice. It melts beautifully and has enough sharpness to stand up to the mortadella.

Burrata: If you want a creamy Italian-style mortadella sandwich, burrata is hard to beat.

Stracciatella: This is basically the creamy interior you love inside burrata. Spoon it directly onto the bread and pile the mortadella on top.

Fresh mozzarella: Mild, milky and really good with roasted peppers, pesto and olive oil.

Sharp provolone: Use this when you want more bite and a stronger Italian-American deli flavor.

  • Buy great mortadella: The meat is the star. This isn’t the place to save a dollar.
  • Ask for it thinly sliced: Thin slices give you that soft, silky texture and crisp beautifully in a skillet.
  • Layer your cheese: Combine provolone cheese with fresh burrata cheese for the ultimate mix of salty, melty and creamy.
  • Pistachio pesto = next level: It transforms this from good to unforgettable.
  • Use a grill pan or cast-iron skillet: You want enough heat to crisp the meat quickly without drying it out.
  • Add something acidic or fresh: Roasted peppers, Dijon, arugula, lemon zest or a little balsamic can balance the richness.
  • Don’t overload the bread: The mortadella should still be the thing you taste first.

FAQs About Mortadella Sandwiches

Q: What goes well on a mortadella sandwich?

A: Mortadella is rich and savory, so I like pairing it with something creamy, something fresh and something with acidity. Provolone, burrata, mozzarella, pistachio pesto, arugula, roasted peppers, Dijon mustard and sun-dried tomatoes are all great options.

Q: Is mortadella the same as bologna?

A: Not exactly. Mortadella and American bologna are related styles of cooked sausage, but traditional Italian mortadella has its own distinctive texture, seasoning and visible cubes of pork fat.

Good mortadella is silky, savory and much more interesting than the standard packaged bologna most Americans grew up eating.

Q: Do Italians eat mortadella in sandwiches?

A: Absolutely. Mortadella is commonly eaten simply with good bread, but it also works beautifully with cheeses, greens, pistachios and other Italian ingredients.

Sometimes the best mortadella sandwich is also the simplest one.

Q: Can you fry mortadella?

A: Yes, and you should try it at least once.

Frying mortadella gives the edges a light crisp while warming the fat inside. Add provolone while it’s hot and you’ve got one of the easiest hot sandwiches you can make.

Q: Can I make this a cold mortadella sandwich?

A: Absolutely.

For a classic deli-style vibe, stack your slices of mortadella with provolone cheese, Dijon mustard, and a drizzle of olive oil on a fresh roll.

If you want something creamier, make a cold mortadella burrata sandwich with pistachio pesto and arugula.

Q: What cheese works best?

A: I recommend provolone cheese for sharpness, but fresh mozzarella, creamy burrata cheese, or stracciatella cheese make it more decadent.

Q: What’s the best bread for a mortadella sandwich?

A: You want bread with enough structure to hold the fillings without overpowering them.

Kaiser rolls, Italian sub rolls, ciabatta, focaccia and schiacciata-style bread are all great choices.

For a cold sandwich, I like something light and crusty. For a hot fried mortadella sandwich, a soft roll toasted in the pan is hard to beat.

Q: How do I store leftovers?

A: Wrap the sandwich tightly and store it in the fridge.

For best results, enjoy within 24 hours, especially if you’re using fresh burrata cheese.

If possible, store the bread, mortadella and wet ingredients separately and assemble the sandwich right before eating. That keeps the bread from getting soggy.
